Café Savarin, “…started in the pastry trade but later decided to become a master of the art of cookery in general. ..worked in such establishments as Hotel de Paris, Cannes; Hotel des Anglais, Beaulieu; Winter Palace, Mentone; Victoria Hotel, St. Moritz; Metropole Hotel, Plombieres; Par Hotel, Vitel, and the Jockey Club and Larue Restaurant in Paris, he was connected with many aristocratic families, among them, the Grand Duchess of Mecklenberg-Schwerin, Madadame Tereschenko, Admiral Wemyes (sp?), Lord of the British Admirality and Duke of Connaught. In 1911…Mr Allevi sailed to South Africa but later returned to the Carlton Hotel in Cannes…It is only 13 years ago that Mr. Allevi migrated to America, becoming connected with the Hotel St Regis, Knickerbocker Hotel and Café Savarin…where he remained until the World War, at which time he enlisted in the Chemical Warfare Service and served with the A. E. F. for fifteen months in France. After the armistice was declared, he returned to the Café Savarin but later was chosen as the chef of the Pershing Square Savarin.
